ANNIE’S COOKING
The great chef, Ducasse said this of her “she has a fairy-like touch with food”. Our dear departed friend Courtine used to say “cooking is as natural to her as singing is to birds”.
This former grazier from the Avenois came to us from her home in the Nord to be a cook in the leek-green Thiérache. Her cooking is a skilful blend of feminine creativity, lighter versions of local dishes and organic fruit and vegetables produced by our head waiter, Hubert - a veritable feast for tastebuds and tums.
